Description: Big Fig opens with rich dark fruit character, including notes of dates, raisins, and of course, figs, giving way to complex malt character, with hints of caramel, toffee, and biscuit. We started with a fairly traditional Belgian recipe with Turbinado sugar and dark candi sugar added at the end of the boil, then fermented with an expressive, highly attenuating Belgian yeast strain. Then we added ripe, sweet Mission figs and Fig Newtons (we couldn’t help ourselves) to complement the malt and ester character of the base beer. The result is a surprisingly balanced beer layered with flavor and complexity.
