Description: Brewed: July 20th 2016, Bottled: August 24th 2017, Released: November 16th 2017. This release marks the seventh vintage of the Fantasia. We decided to change it up a bit for 2017, using more peaches than any other release, giving the beer higher intensity with a concentrated fruit character that's jammier than ever and acidity that's driven not only by the fermentation but also by the fruit itself. As always, we let the beer have an extended contact time on the fruit, where the skins yield complex herbaceous notes that work well with the mild brettanomyces profile. The finish shows great interplay of tannins and hop bitterness thanks to proper conditioning time, so we recommend enjoying this Fantasia within the year.
