Description: Le Grand Monde 2020-8 is another first for the series, and is our take on a Strawberry Lemonade style sour beer. We went with a shorter barrel time on this one, as we’ve noticed in the past that too strong an oak character can drown out strawberry flavors a bit. So this blonde mixed-culture base was laid to rest for just over 10 months in second use wine barrels before we dosed with the most Strawberry we’ve ever used in a beer, then kick-started another round of fermentation with our house culture. Once it dried out a bit, we added some freshly chopped Lemons to re-amplify the tartness and add just a touch of rind bitterness to complement the jammy, syrupy, sweetness of the massive Strawberry addition. We’re left with a sour beer that blurs the lines between juice and adult beverage, far too easy to drink and reminiscent of youth, yet with the complexity of light oak alongside the many strains of yeast/bacteria in our house culture and refined to the standard we are known for.
