Description: blonde Mixed Fermentation Saison brewed with our NC friends Fonta Flora into our rooftop Koelship one day in January of 2020. This pre-pandemic beer was mashed with Spelt, Rye, Wheat, and Malted Oats, lightly hopped, then pumped into our Koelship onto freshly split Virginia pine logs! After overnight cooling and inoculation via the cool night air we racked the beer into oak barrels for fermentation and aging at our wild facility. A year or so later we hand-selected and blended three barrels onto North Carolina pine branches and whole leaf Cascade hops. Delicate, unique, and subtle notes of vanillin, pine bark, and Christmas tree sap with a gentle acidity.
