Description: Our Historic Blanche de Cambrai is a mostly forgotten style, but was once brewed by many in the Nord Region of France. Unlike Biere De Garde, or traditional white beers being made in Belgium, this beer was hopped at a much higher rate and barely boiled if at all. We used rustic 6 row malts in the mash, combined with one of our Saison Brettanomyces blends similar to our Historic Grisette. We also added fresh sumac harvested from our farm to the whirlpool instead of traditional Belgian spices.
