Description: Cassis du Fermier is our delicate and aromatic Saison du Fermier aged with blackcurrants in French Oak wine barrels. The brightness, depth and rustic character are created by the wild yeast native to our family’s Missouri farm. This Blackcurrant Saison was fermented in and aged in wine barrels for more than a year. For this third blend of Cassis du Fermier, we knew that the intensity of the Blackcurrants, their deep complexities and their boldness could hold their own when added to our recently acquired red wine barrels. We reached out to our friends at Merry Edwards to source beautiful French Oak, California Pinot Noir barrels exclusively for this beer. The refined oak presence perfectly complemented the depth of the Blackcurrants to produce our favorite Cassis du Fermier to date. As with most of our recent Saisons and wild ales, we once again pushed the blend toward a softer acidity to not only be more elegant and delicate now, but to age and cellar in the bottle for years to come.
