Description: Compunction is a sour blonde ale aged in white wine barrels for 8-12 months with Brett and bacteria. After barrel aging, we transfer the beer onto approximately two pounds of local Sonoma County pluots per gallon of beer (1,000 lbs. of fruit!). The beer remains in contact with the fruit for about 6 to 7 months in a stainless steel tank before it is transferred off the fruit and kegged/bottled. ***Pluots are a cross between a plum and an apricot, and are derived from plumcots, a fruit bred by Luther Burbank right here in Sonoma County.***
