Description: Aromatherapy is an award-winning IPA that John first brewed back in 2010, but seemed ripe for an update and rebrew on the big system. Aromatherapy was originally a single malt IPA based on a whole lot of Amarillo hops. For this reboot, we wanted to showcase the lovely qualities of Mosaic hops. Mosaic, a daughter hop of Simcoe, tends to express aromas of blueberry, tangerine, papaya, rose blossoms, and bubblegum, which makes it such a fun hop to play with. The grain bill consists of 100% Maris Otter malt to showcase a soft malt background. But the belle of this ball is most certainly the Mosaic hops, which are added in increasing volume late into the boil and whirlpool. To accentuate this beer even further, we double dry-hopped this beer in both primary to induce biotransformation and formation of terpenoid compounds, and also during secondary, to enhance the natural flavors and aromas that the lovely Mosaic hop can present. We utilized both new crop Mosaic pellet and Mosaic lupulin powder in both additions. This beer was brewed by our guest brewer, Tony Cordova, who visited us for a few weeks in late 2017/early 2018. Please give him a pat on the butt when you see him, as he did a fine job brewing this beer for us. Cheers!
