Description: Fruity-Citrusy-Tangy: Saison Bretta utilizes both saison yeast & Brettanomyces, a wild yeast strain. Brettanomyces works slowly but thoroughly, eventually eating through sugar chains and other compounds normal brewer's yeast cannot. The result is a wide array of aromas and flavors unique to wild yeast. The longer the fermentation, the bolder the flavors. This young Bretta displays mild tartness and hints of dank hay in conjunction with the fruity characters of saison.
