Description: We heart sour ales. We lack pretty wooden aging tanks in a tucked away corner of the brewery. And our belief that all good things come naturally we don’t believe in dosing (or as many breweries do – over dosing) to get that funk fast. Natural funk takes time. That’s why we take one batch of Red Zone a year and let it age naturally to create a balanced sourness that goes so well with the spices already in this beer. Funk Zone is the beginning of what we hope to be a fruitful sour program at Prism. The sourness comes from the natural PA Maple Syrup that is used in this beer. Normally Maple Syrup has a high acidity that prevents bacterial growth. When you dilute that into 620 gallons of beer the natural fauna begins to come out over time. And although we do heat the Maple Syrup to kill the majority of this natural bacteria, some remains, which helps us create a natural sour for the beer.
