Description: Lafayette Brett brewed with ECY-04 (East Coast Yeast's Brettanomyces Anomala strain). Comparison to WLP 644: Rustic, and dry with bright yet subtle acidity. Lots of hay, citrus zest, "Biscoff cookie", mild tropical fruit, and restrained barnyard (expected to develop intensity with age). Reminiscent of a farmhouse Saccharomyces strain.
