Description: This is the last in the Sæsoner series and we wanted to bookend the trilogy with something we can really celebrate. Before this collaboration with Alefarm was in place, we admired them for their mix fermentation saisons so of course it only made sense to brew one as part of the series! For the primary fermentation we used the same yeast as the previous three saisons, WLP565, before we then went to add Bruxellensis for the secondary fermentation. Bruxellensis is a wild yeast that performs in the same way as Brettanomyces and is known for harbouring a variety of slightly sweeter flavours such as delicate mango or pineapple which contrasts and balances nicely with the earthier notes from WLP565 to ultimately create a harmony of dry, tart and sweet fruit flavours. We conditioned the beer on 200kg of blueberries to really draw out the flavour whilst utilising the tank space at our original Flax Store site to let the beer condition for roughly two months. We wanted to grant the beer time to condition and allow for the blueberry flavour to shine through as much as we’d hoped when we first dreamt of the idea! After tasting the beer over several weeks and admiring its aesthetically pleasing deep purple hue, we’re excited to say it’s finally ready to be brought out into the world.
