Description: For this beer we chose to utilize a different yeast strain, Brettanomyces Lambicus. This beer carried the same grain bill and process as #2. The only differences were the Brett strain used for fermentation and the oak barrels used. These were freshly emptied bourbon barrels. The aroma indicates much more sourness than the previous release with dark fruit and berries dominating the flavor. It’s a beautiful amber color with a dark, off-white head that lingers to the glass throughout the drinking experience.
