Description: Highland’s first ever Brett beer is the pet project of brewer Toby Lewis. Here's the beer in Toby's own words: This beer combines 100% Brett fermented beers with a new school New England IPA approach resulting in a fruity, funky batch of awesomeness that I'm sure everyone is going to enjoy. Brettanomyces is by nature a different animal than standard yeast strains. Not only in flavor but also in the way it eats sugars normal yeast strains do not. The result can be a very light bodied beer. I added Honey Malt, wheat, oats, and flaked rye in the malt bill to increase mouthfeel in the beer and lead to the orange juice like appearance. I dry-hopped with Galaxy and Mosaic early in fermentation to drive the fruit character.
