Description: Originally brewed in 2010 to evoke the popular Italian drink, Limoncello, Lemon Cello was imagined and created for the RateBeer festival in Rome. Crafted from oats, lactose, lemon juice, and lemon zest, and then kettle soured, it was a landmark beer: hopped as if it were a double IPA, sour, citrusy, and with a creamy full body. The new version brewed in Colorado omits the kettle sour—instead opting for mixed culture fermentation in foudres. A portion of that original brew was conditioned for over 15 months in Bourbon barrels from our favorite distillery. The bourbon barrel version conjures spirited cocktail notes and has internally been referred to as “whiskey sour.”
