Description: A 40 bbl tank was available for us to brew another Single Tank Series beer. We’ve decided upon doing a Traditional Scotch Ale, also called a Wee Heavy, or 120 Schilling Ale. We’ll call it “Heavy Lifter.” Scotch Ales tend to be on the sweet and malty side of the flavor spectrum with a pronounced caramel flavor. This is not to say it’s out of balance on the sweet side, it just isn’t a big hop bomb. To over simplify, one could describe it as a Kilt Lifter on Steroids. It weighs in at 9.3% alcohol with a very low bitterness which makes it dangerously drinkable. To set it apart from Kilt Lifter, we added 100 pounds of bourbon barrel aged Caramel 80 malt. That malt aged in the barrel for 4 months before becoming part of the beer. (100 gallons is aging in our cellars in Heaven Hill and Breckenridge barrels as well.) Enjoy. Repeat.
