Description: This ale was fermented on dark cherries to provide a hint of sweetness. This Imperial Red Ale uses brewer's yeast combined with Lactobacillus to give a distinct sourness without being overly puckering. This beer kettle soured for almost 2 days allowing naturally occurring Lactobacillus bacteria to acidify the wort. After primary fermentation, we blended the beer with over 1 gallon per barrel of dark cherry concentrate to balance the sour base of the beer against the sweetness of the cherries. Drinks like a tart cherry pie. A wonderful blend of sour and sweet with enough bready malt presence for support. Nice mouthfeel without being cloying, finishing relatively dry.
