Description: Pumpeon Brewing 101: we add a bit of spice (and lots of pumpkin, of course) during the initial brew, to get the base flavor before transferring to the bourbon barrels. After a year (give or take a few weeks), we transfer back to a fermenter tank and add additional spice - cloves, cinnamon, nutmeg, etc. For this Trophy Club version, we didn't add that second round, because we had something else we really wanted to try: amburana wood. Amburana is a Brazilian wood used in the making of cachaça, a delicious South American rum-type liquor. The wood itself has an incredible aroma and flavor, almost like spiced sugar cookies. We managed to get our grubby hands on a decent amount of amburana chunks, and used them to flavor this selection of Pumpeon. It's good.
