Wherever it comes from, it rings true for this beer. And for the project we’re embarking on, exploring our roots in all and everything that is American style IPAs. West coasts, east coasts, straight-ups, curveballs, and everything in-between. Like this one, a westie. We want to find our bitter bite, malty body, and pine forest citrussy properties again. We might have lost them somewhere. We’re starting to look for everything with some pale ale-, pilsner- and crystal malts. Adding some Amarillo, Cascade, Chinook and Columbus hops. And then letting it round off with just the right amount of bubbles. Pinball!
