Description: When a partnership between Cigar City and Oskar Blues was considered in early 2016, one of the centerpieces of the deal was the option to utilize some of the excess capacity at OB’s facilities in North Carolina, Texas and Colorado to increase our core beer production, namely Jai Alai. Much the way we had to educate our brewers on standard operating procedures to properly brew Jai Alai on our 30-barrel brewhouse when it came online in 2013, or educate the brewers at Brewhub on how to properly execute Jai Alai when we began our alternating proprietorship in 2014, we needed to ensure that Jai Alai brewed at Oskar Blues’ facilities would be approached with the same procedures we utilize in Tampa. Part of that process included discussions about filtration and shelf stability. While Oskar Blues’ focus on quality has always matched our own, their filtration procedures and filtration equipment were different from those that we use at our Spruce Street brewery. In the true spirit of partnership, our Oskar Blues counterparts didn’t demand that we adopt their processes and procedures. Instead, they posed the question to us: “Let’s see how Dale’s tastes after being filtered and stabilized using the Cigar City method!” Having the equipment on hand, CCB offered to brew a single batch of Dale’s at our facility to compare our respective processes in finished beer brewed in Tampa and in Colorado. The results? It’s Dale’s alright, but it’s as bright and fresh as it would be if you were drink
