Description: Psalm Spite is our red Palimpsest base aged in Sherry Puncheons for 8 months and then re-fermented with whole Black Raspberries and aged for an additional 6 months on the fruit in the Sherry barrels. This year we bottled it still (un-carbonated) in 375ml red wine bottles with wine corks. It's a super deep inky black color with a ton of oxidized sherry aromatics and an astringency from the berry skins that assaults your taste buds in the best way possible. It's also bone dry but with a gigantic mouthfeel. I personally recommend drinking it like red wine at cellar temperature and from a stemmed wine glass. Maybe even try half the bottle then re-cork it and taste the next day to see how it opens up. We expect that this beer will age graceful
