Description: Of the many barrel experiments we've done in the past year, none exhibited a better canvas to work with than the beer you're drinking right now (or about to). The lactic acid was clean and very up front, but it needed some "oomph" - so we decided to blend a portion of Belgian witbier along with a pitch of our house brett culture to funk it up. And then fresh peaches, lots of 'em. The result brings a pleasant acidity, with abundant stone fruit flavors and classic brett "barnyard" notes in the aroma.
