Description: No other beer demonstrates the core of what Black Project is about better than OXCART. This beer is a blend of 1, 2, and 3 year old lambic-inspired beer made in strict adherence to the Methode Traditionelle 3-yr guidelines. The beer is made with a long boil, aged hops, cooled and inoculated via coolship. It is then fermented and aged in neutral oak barrels. After 1-3 years it is blended to taste and then bottled. It conditions in the bottle for a minimum of 6 months. This year's batch is the most authentic we've ever made, in my opinion. Lighter carb than some previous years allows for more complexity in the taste. Subtle stone fruit and melon, bright but restrained acidity.
